Three indigenous West African ingredients for building flavor from the ground up.
The most interesting flavors in West African cooking are not the loudest ones. They are the ones that build.
This set introduces three ingredients that define the aromatic and umami foundation of Nigerian cooking — Iru, Country Onion, and Nigerian Ginger. None of these are easy to find through conventional distributors. All three are foundational.
New to these ingredients? That's exactly the point of starting here.
Each pouch is sized for real kitchen testing, not sampling.
What's Inside
Iru (Fermented Locust Beans)
Umami · Deep · Fermented
One of the most important ingredients in West African cooking, and one of the least understood outside it. Iru is a fermented condiment made from locust beans with a deep, savory, funky profile comparable to miso or doenjang in umami depth. Use as a base in soups, stews, and sauces. Add early in cooking to build the flavor foundation.
Country Onion
Aromatic · Earthy · Layered
A native West African seed with a warm, resinous, onion-forward aroma. Used in pepper soup, broths, and spice blends. Adds a native aromatic layer that no conventional spice replicates.
Nigerian Ginger
Bright · Sharp · High volatile oil content
Nigerian ginger has a significantly higher essential oil content than most kitchen ginger — sharper, more aromatic, with a longer finish. Use in spice blends, marinades, broth bases, and any application where ginger is a primary flavor.
How to Use
- Add Iru at the start of cooking as a base — treat it the way you would miso or a fermented paste.
- Toast Country Onion lightly before grinding to open the aromatic profile.
- Use Nigerian Ginger in any recipe calling for ginger — start with a smaller quantity than you would typically use; it carries further.
- Combine all three in a broth base for a foundational West African stock.
Why This Set
These three ingredients sit at the intersection of fermentation, native aromatics, and high-intensity spice — three areas of growing interest in contemporary cooking.
None of them are novelty ingredients. All three have centuries of culinary application behind them. This set is a practical introduction to that depth.

FAQs
What is this set?
Three indigenous West African ingredients — Iru, Country Onion, and Nigerian Ginger — in 1oz exploration-size pouches.
Is Iru the same as fermented soy?
No — Iru is made from locust beans, not soy. The fermentation process produces a similar umami depth, but the flavor profile and source ingredient are distinct.
How strong is Nigerian Ginger compared to regular ginger?
Significantly stronger. It has a higher essential oil content and carries further in cooking. Start with less than you would normally use.
Is this set beginner-friendly?
Yes — these ingredients are less familiar than the Nigerian Spice Mixes set, but the How to Use section gives you a clear starting point. Unfamiliar is not the same as difficult.
Plant-based friendly?
Yes. All three ingredients are plant-based.
